Dark, but Lovely

     First of all, I just wish that you all had wonderful Christmas! While the love is still spreading around the world, the joyful season (which I absolutely love) has already gained its momentum and is almost coming to the end. Yet, the holidays are still on and the New Year is hanging on the ends of our nose tips. Usually I spend the New Year eve somewhere in Town with some friends, but since I moved and I don’t see my parents very often, I am going to spend it with the family. So, on this occasion I am going to make some chocolate cupcakes with cream cheese filling. I love this recipe; it makes around 12 solid cupcakes


Ingredients (for cream filling):

1.       450g cream cheese;
2.       100g (⅟2 cup) of sugar;
3.       2 egg yolks;
4.       2 tbs. of sour cream (I suggest using sour cream, not whipped cream it will give the real taste to the cupcakes, not only sugar);
5.       A pinch of salt;


Ingredients (for cupcakes):

1.       1 ⅟4 cup of sugar;
2.       1 ⅟2 cup of flour;
3.       2 cup of cocoa powder (I recommend using the baking one, so it won’t be sticky or ruin the chocolate taste/colour);
4.       1 ¼ tsp. of baking soda;
5.       ¾ Cup of sour cream;
6.       1  Cup of water;
7.       ½ Cup of unsalted butter;
8.       1 tsp. of vanilla extract;
9.       Pinch of salt;


                Making:

·         Preheat the oven up to 1800C. Put the cupcake wrappers in.
·         Make the butter a little soft, but don’t make it warm. I can suggest adding it to the bowl on the boiling water, and wait afterwards until it gets cold again.
·         Until you wait for the butter to go on and of warm and cold, let’s make the filling! In separate bowl add sugar, salt, cream cheese, egg yolks and sour cream. Blend it until it gets there is no more bubbles or pinches of sugar. Put it in the fridge and make it cold.
·         Now take two bowls: bigger bowl for sugar, salt, flour, cacao powder and baking soda and smaller one for sour cream, water, butter and vanilla extract. Mix these things in those two separate bowls. 
·         Now make a hole in the middle of powdery mixture and add the liquid one there. And then:
mix, miX, MIX!
·         Put the finished cupcake mixture to the cupcake wrappers (don’t worry it is not going to fill the entire cupcake, because we are going to add the filling on top of them.)
·         Add about a tablespoon of filling on the top of cupcake mix.
·          Bake the cupcakes for 20-25 min.

Afterwards, you can make some buttercream or any fondant to decorate them.
